It was chance and a delicious encounter in Waco that led Andrea and Mike Guerra to invest in Pokey O's, a food truck business that sells made-to-order ice cream sandwiches. Now they own the Tarrant County franchise of the popular Dallas eatery, featuring 11 cookie varieties, including gluten-free options, and 15 flavors of Blue Bell Ice Cream. "We saw a Pokey O's food truck in Waco and noticed everywhere they went, they got a crowd," says Andrea, who earned an undergraduate degree in English in 2012. Her husband, Mike, is a former UTA baseball player and assistant coach who graduated in 2012 with a degree in interdisciplinary studies. He's now working on a master's in public administration. The couple spent the last eight months building their catering business and got their truck this summer. "We want to be at as many UTA events as possible," Andrea says.
